Naniamo bars. We all love em! Weather it's the chocolaty goodness or the green mint frosting in the middle it's hard to turn down a good naniamo bar. I`m about to share with you an awesome recipe my sister found for them online a few years back and we`ve made them ever since. They won`t crumble and they taste heavenly.
Bottom layer
1/2 Cup Butter
1/4 Cup Sugar
5 Tbs. Cocoa
1 Egg (beaten)
1 3/4 Cups Graham Cracker Crumbs
3/4 Cup Sweetened Flaked Coconut
Middle Layer
1/2 Butter
3 Tbs. Milk
2 Tbs Vanilla Custard Powder (Bird`s custard powder can usually be found in the international isle at your grocery store, if you can`t find it, substitute vanilla Jell-O powder pudding)
2 Cups Icing Sugar
1 tsp. Peppermint flavouring
2 Drops Green Food Coloring ( I did more)
Top Layer
2/3 Cup Semi Sweet Chocolate Chips
2 Tbs. Butter
1 Large or 3 Small Candy Canes (crushed)
Directions
1) Melt first three ingredients in heavy saucepan. Add beaten eggs stirring quickly until thickened. Remove from heat. Stir in coconut and crumbs. Press into ungreased 9x9 pan and chill in fridge.
2) Cream butter, milk, custard powder and icing sugar together and beat well. Add in peppermint flavouring and food coloring. Blend well and spread over first layer.
3) Melt chocolate and butter over low in a double boiler. When cool but still runny, spread over second layer. Sprinkle candy cane bits over top. Chill until chocolate hardens. Cut using a sharp warm knife.

 Individual Oreo Cheesecakes




          Oh Yummm! I recently hosted a Lia Sophia jewelery party, and served theses beautiful and delicious individual, no-bake, cheesecakes! But, unfortunately I won't be able to share the recipe with you... it's a family secret... Just kidding! today is your lucky day because you too can make these beautiful little gems!
No Bake Oreo Cheesecake
45 Oreo Cookies (divided)
2 1/2 Cups Oreo Crumbs
2/3 Cup Butter Melted
1 Pkg. Philadelphia Cream Cheese, Softened
1 tsp. Vanilla
1 Tub Cool Whip, Softened

Crust:
Line a 9"x13" pan with foil, with ends of foil extending over sides of pan. Coarsely chop  the oreos,  saving a few as a garnish for later. Set aside. Put oreo crumbs, and melted butter in bowl, and mix well. Add 1/2 of the chopped oreos. Press into the bottom of the pan, and refrigerate while preparing filling. 
Filling :
Beat the cream cheese and vanilla in a large bowl, until well blended. Gently stir in cool whip and the other 1/2 of the chopped oreos. Spoon the filling over the crust and refridgerate four hours or until firm. Use the last few whole oreos to garnish, you may break them if you wish, or use them whole.

Note: As you can tell, this recipe is for a 9"x13" pan, to make them individual, just follow the same recipe, only instead put it in FOIL LINED cupcake papers.


Now you just have to invite your girlfriends over and your set! Enjoy!
